It is an exhausting, stressful weekend here. The kitchen floor, which has worried me since we moved in almost 3 years ago, finally spiked my anxiety to an unhealthy point. Hubs lifted it up, oh, sweet baby jeebus, it SUCKS. Whoever built it was a cheap bastard and them some where over the course of the years one of the residents let a leak go completely out of control.
Nothing like the stress of spending money you don’t have to keep kids from falling through the floor.
Normally, I’d be throwing in the towel on dinners. Frozen pizzas and fast foods for everyone!!!! I did not do that this time. In order to be lazier and save money, we became warehouse club people last week and I have a menu for the ENTIRE MONTH. – More about this soon!
Tonight’s dish was a revision of Amish Breakfast Casserole. It was a big hit. Our house is full. Us, 4 kids and my mom.
I’m gonna say 8 servings on this.
- 1.5 -2 pounds cooked, shredded pork
- 1/2 cup chopped onion
- 12 eggs
- 2 pounds frozen broccoli florets
- 8 ounces cheddar cheese shredded
- 1½ c cottage cheese
Preheat oven to 400°F (204°C). Grease 2 9×13 pans. Mix everything together in a large bowl (or two). Divide evenly between the two 9×13 pans. Bake for 40-50 minutes. You can totally smell when it is done.
Per serving: 512 calories, 33 grams fat, 9 grams carbs, 38 grams protein
